In the production of baked goods such as bread and pastries, common surface treatments—such as spraying egg wash, milk, syrup, edible glitter, or baking glaze—involve the application of liquid or particulate coating materials. Though thin, these coatings serve distinct functions:

  • Decorative: Enhance gloss and visual appeal, such as using egg wash or specialized baking glazes to impart a golden sheen to bread surfaces;
  • Protective: Reduce moisture loss, delay staling, and maintain soft texture;
  • Adhesive: Provide a bonding base for subsequent ingredient additions (e.g., sesame seeds, sugar crystals);
